Rings do not have religious significance in Islam. Exchanging them between soon to be married couples is related to a cultural norm not a religious one. There is no harm in doing it, neither is there a prohibition against it. Also, there are no defined ceremonies for marriage in Islam. One is free to celebrate as they please within the limits of Islamic standards. So long as the two persons are in agreement to the marriage, and the marriage is publicized then it is legal and valid.
