Should men cover their head during prayer and is it Sunnah to do so?

It is not essential for a man to cover his head during prayers. Islam does not recommend any special dress for prayers. The same dress that is considered decent and presentable in our ordinary lives is also considered sufficiently appropriate for prayers.
Thus, if a person keeps his head covered in his normal life, then he may also keep it covered during prayers. Nevertheless, specially covering the head during prayers is not a requirement of Islam.
Covering of the head cannot be termed as the Sunnah of the Prophet (pbuh). The Prophet (pbuh) maintained his ordinary attire during prayers, which, generally, included the head covering.
